The suggested vegetables in your kits are just that – suggestions, feel free to get creative and try some of your favorites. Some of the readily available vegetables found in Thai dishes are; Spinach, pumpkin, bamboo, eggplant, snap peas, bok choy and broccoli. For a burst of colour to your dish try bell peppers and snap peas.
You can choose any meat or seafood that you like to for your dish. I use chicken in everything but love our green with seafood and red meats with our Panang.
Cut them up into small pieces to really spice up your dish, remove the seeds for a ‘not so spicy’ kick or leave them whole to lessen the heat further and add some great color and texture to your meal. Be careful with them – your dish will get really hot really fast. Wash your hands thoroughly after handling and don’t touch your face – or anyone else’s!
You can find coconut milk in most stores in the ethnic isle and sometimes in the ”canned milk’ isle. We recommend Aroy-d brand as it’s simply coconut and water. We’ve found the best priced places for it are usually Walmart or Superstore. See our FAQ page for information on the benefits of coconut milk.
To freshen the peanuts in your Panang & Massaman kit, toast them on a baking sheet in a 350 degrees F oven for 10 minutes or place nuts in a small bowl and microwave on High for 1 to 1 1/2 minutes before using them in your dish.
If there’s a Vegetarian in your dinner party forget the meat and go ahead and load up your curry with all of your favorite crisp fresh vegetables. We recommend our Red curry kit as it’s a heavier curry and can better absorb water from the vegetables. We do make our curry pastes with Shrimp paste so it may not be suitable for the Vegans in your life.
For diabetics in the party you can opt to leave out the Palm Sugar in your kit to provide a Sugar free meal. See below for rice alternatives.
We provide a high quality sweet smelling Jasmine Rice with each of our curry kits but they are also great with brown or basmati rice or even over a bed of spaghetti squash, steamed vegetables or cauliflower rice (grate cauliflower & microwave, bake or pan fry with butter or olive oil).
