Thai Manna’s Tropical Fruit Pizza

I’m often asked what a good dessert for our Thai Curries would be. I can’t say that I ever came across a Thai dessert that I really loved and wanted put my name behind, but this one is perfectly themed for your next Thai night. Be warned, your guests are going to do whatever it takes to get this recipe from you!

Crust:

  • 2 cups flour
  • 1/2 cup brown sugar
  • 1/4 cup icing sugar
  • 1 cup butter, softened
Mix crust ingredients together until dough forms a ball and press into pizza pan. Bake at 350 for 10-12 minutes or until golden brown. Cool.

Topping:

  • 1 –8 oz package cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla
  • Variety of sliced fruits
Beat together cream cheese, sugar and vanilla. Spread over cooled crust. Cover your topping with sliced fruit – try some pineapple, strawberry, oranges, kiwi, banana, mango, papaya, oranges and shredded toasted coconut. Want to get really fancy? Check out your local Asian food market and pick up some rambutan, dragon fruit, starfruit and longan.

Glaze:

  • 1/4 cup water
  • 1/4 cup orange juice
  • 1 tbsp lemon juice
  • 1/4 cup sugar
  • 1/2 tbsp cornstarch
Combine glaze ingredients in a saucepan and boil for one minute. Pour over fruit on pizza. Chill.
